Broiled Salmon or Trout with Dill

2 to 4 salmon or trout fillets (about 2 lbs)
1/3 cup fresh lime juice
2 TBL chopped fresh dill
1 1/2 TBL sugar
1 tsp dry mustard
1 tsp salt
1 tsp Worcestershire sauce
Dill Mustard Sauce (1/2 C dijon mustard with 3 TBL fresh dill)
serve with fresh dill sprigs and lime wedges

1. Rinse salmon and pat dry. Your captain should have removed all bones, but just in case, press fingers lightly into the flesh to detect any remaining bones and remove.
2. Place fillet in large plastic food-storage bag.
3. In small bowl or jar with lid, combine lime juice, dill, sugar, mustard, salt, and Worcestershire until well mixed.
4. Pour over salmon; seal and refrigerate 1 hour to marinate.
5. Meanwhile, prepare Dill Mustard Sauce by mixing 1/2 cup dijon mustard with 3 TBL fresh finely chopped dill and set aside.
6. Heat broiler and line a cookie sheet with foil. Place a few drops of extra virgin olive oil on foil and spread evenly.
7. Place fillets on foil and broil until flesh feels springy to the touch, flakes with fork, and is opaque all the way through.
