6 salmon fillets (5 or 6 oz each) Prep time, 15 minutes. Cooking time, 9 to 11 minutes Preheat oven to 450 degrees Sprinkle fish with lemon juice and season with salt & pepper. In small bowl, mix peanuts with break crumbs, zest, parsley and garlic and stir in oil. (There should be only enough oil so that if you squeeze the mixture tightly with your fist, it will hold together.) Sprinkle each fillet with one-sixth of the crumb mixture and press lightly into salmon. Place salmon in an oven-safe pan. Pour wine into bottom of pan to keep salmon moist while it roasts. Roast in a preheated oven 9 to 11 minutes or until topping is golden and salmon is just cooked through. Transfer to a plate; serve with Green Goddess dressing, if desired.
